  • Shanghai cuisine is a popular style of Chinese cuisine apart from the Eight Great Traditons-- Chuan, Lu, Yang, Yue, Hui, Min, Xiang and Zhe, which are famous provincial cuisines. Shanghai cuisine, Hu Cai, refines those neighboring provinces (mainly from Jiangsu and Zhejiang provinces along the costs)

    Shanghai cuisine, also called Benbang cuisine, developed from homely dishes of local family long time ago. Shanghai cuisine has blended other cuisine styles, local or foreign, and reveals its own character. The main ingredients basically include fish, eel, crab, and chicken, together with sugar and soy sauce. Red cooking and sauté are popular style of cooking. Benbang cuisine tends to be heavy flavored and bright colored although the flavors have been lightened to cope with all sorts of tastes as it develops.

    Another indiscerptible part of Shanghai cuisine is Dim Sum, such as Sheng Jian, Xiao Long Bao, sometimes known as Shanghai dumplings.
